She's a Catahoula leopard dog/Mix (with I don't know what)

She loved the car, thankfully.

She's a shelter dog we picked up yesterday (formerly known as Patsy, lol). There were a couple of dogs we were looking at and took outside to play with, but she was the first one that when we got outside wanted to play WITH us and not just run around like a looney toon. The volunteers told us that she'd been at the shelter since August and had been probably less than six months old when she got there (I think she was a stray). She was adopted at the end of the month and the people returned her after 3 days. SMH. The cited the reasons that she had issues with jumping, nipping, and chewing, which is all true, lol, but we also think she's still less than a year old and hasn't had any training since all she's known is the shelter. She's really sweet though. We were going to look at a few other dogs before making our decision, but one was out being looked at and the other's info was gone so...I took it as a sign, lol.
She's already housebroken (in fact we've been taking her out and she doesn't really want to go very much) and knows sit...that's about it. Every so often, when my boyfriend is sitting on the couch, she'll turn crazy and try to jump on him and nip a bit. We've been standing up and leaning into her to throw her off balance, saying 'off' and also say 'ouch!' when she bites and stop playing with her immediately. I think once we do some training she'll calm down a lot. She was nuts on her walks yesterday and this morning we tried a different tactic of keeping her closer and redirecting her attention every time she pulled. It's already been so much better, so I think we'll get there. We won't be giving up so easily!
Does anyone have any advice on how they got their dogs to stop jumping/nipping? We're going back on Tuesday to get her spayed...does that help mellow a dog out at all? As far as the chewing, we've just been trying to make sure she has a Kong or a rawhide around to keep her occupied outside of crate.
