And I know it can come across as annoying and super-perky, but then I feel like using just a period can come across as dull and uninterested.
For instance, what if someone tells you they had ate a fantastic sandwhich at lunch.
Saying, 'That's great.' sounds like you are being sarcastic/a smartass or like it should be said in a monotone voice like the 'Bueller?...Bueller?...Bueller?' guy.
But saying, 'That's great!' sounds way too damn happy when talking about a sloppy joe or something.
What to do?
