Take a chicken breast, and pound it until it's thin. In the food processor, put in a bushel of spinach (just the leaves) and as much feta as you like. Add some EVOO, salt and pepper and blend. I don't really measure this part, but I like it pretty cheesy, so maybe put in just over a 1/4 cup of feta. Then, I take the mixture out of the processor when it's blended together like a paste, and with a rubber spatula, I spread it on the inside of the chicken breast. Then I roll it up, kind of like a cinnamon roll, and stick a toothpick in it to keep it shut. Then I either roll in bread crumbs, or wrap it in proscuitto (or bacon), pop it in the oven at 350 for about 30-40 minutes, and eat! I usually used pounded chicken tenders because they cook up faster (350 degrees for 30) and look better on the plate... 3 or 4 tenders a serving. Goes great with white rice made in chicken stock, asparagus, rosemany red potatoes, etc.
