How do you nicely tell a guy to fuck off?
Mind you I think he may be a crazy so I'm trying to be as nice as possible about it... I hung out with him once and made it clear it was just as friends
and dude tried to get all frisky and shit I almost had to fight him... This guy messages me non-stop trying to get together and no matter what I say or do he
just doesn't give up... I told him I have a man, even tho I don't and that doesn't seem to matter and I've made it clear that I'm not into
him and that we can be friends and that is it... but he just doesn't get it 
I'm trying not to be mean but my patience is wearing thin....

Stop responding to him altogether. That ALWAYS works for me. You'll still get a flood of messages and such, but at least he goes away.

just ignore it. with men like that, a response no matter how kind or how mean is still attention. no attention is what works best so don't reply to his
texts AT ALL.

Ignoring it does not always work. Because sometimes they go fucking crazy and text/call you non fucking stop. It's annoying as shit.
