Cut the chicken breast thinly, dredge in flour, egg and then breadcrumbs. Fry in olive oil until golden brown. Then cover the bottom of a baking dish with
marinara sauce, then layer in the chicken in a single layer, cover with more sauce and mozzarella cheese and bake until the cheese is nice and bubbly.

I usually make pasta too if anyone wants any, but I don't serve it with the chicken together. It's good with garlic bread and some salad. The key is to get it nice and crispy (but not burnt!) before you put it in the oven otherwise it'll get soggy. |
