Wow, we've replaced and have redone a lot in our house, but our project does not compare to the scope of yours! You're doing the right thing by not living in your house while you're renovating it, and so far it looks really great!

You seem to have everything under control, but thought I'd just offer a piece of advice: choose hardwood over carpet wherever you can! It's SO easy to clean! We have area rugs to create "zones," but everything is hardwood. Except the kitchen and bathrooms, which are tiled.

And yeah, like Dunder said, it's not expensive to refinish floors if you're still considering it. It's not something I would recommend doing yourself though, because you can end up with the machine sanding for too long in one spot, wearing down the wood or even going through it! I live in a major city and paid someone $3,500 to refinish about 1,000 square feet. I'm sure it'll be a lot cheaper in your neck of the woods.
