For me, it doesn't matter if the flavor or texture is supposed to be better because it's a mental thing. I do not like the thought of eating pink meat just as I do not like eating sushi that has raw fish. I just don't like undercooked proteins.

I'm sorry but if a chef gets irritated because their "talent" is being wasted, that's pretty stupid. I mean, would they get upset at someone asking for minimal oil/butter to be healthier?

This actually reminds me of when I went to a Vietnamese restaurant a few weeks ago and ordered a dish with beef. I asked the waiter if I could have chicken instead and he told me no because it tastes better with beef. Like an idiot, I said okay but as I read this thread, I'm a little irritated about it weeks later LOL
