Well done doesn't have to be dry and chewy. And well done doesn't mean burnt. It simply means the juices run clear instead of pink or red. I cook our steaks well done and they never come out hard and are very juicy. You simply sear it on both sides on the pan, and then broil it in the oven or throw it on the grill. Searing it first locks in all the juices when you transfer it to finish cooking. Tada, juicy steak every time.
