I agree they need mostly organ and muscle meat. The rescue I volunteer for provides these percentages to our adopters who want to feed raw:

Approx. 80% muscle meat with fat.
Approx. 10% Organs.
Approx. 10% Raw meaty bones. (also give raw meaty bones as treats throughout the week).

This site is also helpful with guidelines and information: http://rawfeddogs.org/rawguide.html

I also have several friends who supplement their dog's raw diet with items from The Honest Kitchen. The sell natural dehydrated food and supplements.

My best friend feeds her 4 dogs a raw diet, and I have learned from her since I keep them quite a bit. Typically, she will feed them chicken quarters or thighs, chicken necks, pork necks, beef and fish. When she is able to get venison or goat, she will use that. Her dogs love goat because it is very gamey. She will also feed them tripe once a month as a treat.
