I use the Goodreads Reading Challenge to keep track, too. 2011 - goal of 100, read 107. 2012 - goal of 75, read 52.

For 2013 my goal is just 30, but that's because I'm getting married in November and I know my last year's goal took a nosedive after I got engaged in May because I was reading way more wedding blogs than books in my free time, lol. I expect this year will be just as bad with all the actual doing of wedding-related tasks.

I was chugging along last year just fine until I hit like 40 books, flagged for a bit, then picked up again when I got a newer, better e-reader right after Thanksgiving. I don't pressure myself to finish the challenge...before I started the GR challenge I always read a lot just didn't count it, but the organizing side of me loves the idea of tracking the books I read in a year. It's not stressful to count unless you make it stressful.

I've never thought of setting myself up a specific list of books to read, though. There are too many new ones or hidden ones I find throughout the year that would make it impossible to stick with it. There are some that I stare at on my to-read list for so long that I almost don't even want to read them anymore, lol.
