I rinse mine with hot water. My mom always told me too but I don't know why.

I think people think it makes them not stick, but a little bit of olive oil in the water while they're boiling works a lot better.

I think it rinses off some of the starch and stops the cooking process.

I've always thought it was so it doesn't overcook. I rinse mine in hot water too.

It stops the cooking process so they don't get overcooked and go all mushy.

It shocks the pasta so it stops cooking. You can refresh it in hot water.

I do it because I thought it stopped the pasta from getting any softer.
