Usually medium well but I go for medium sometimes. My roommate was telling me how restaurants may give the lower qualities of meats to people who order well
done because its just going to get burnt anyway

Medium rare.
If you go to any culinary school they teach that med-rare is the best way to go in any situations....even with fish and lamb. If you ever watch Top Chef, anything over med-rare is "overcooked" and therefore not satisfactory. I cannot eat a steak over medium, it is so tough and gross. I wish you people who waste your money on well-done steaks would just close your eyes and eat one cooked less. I used to work at a steakhouse and think it was sad when someone ordered a well-done filet and ask for A1. You might as well get a hamburger, it tastes the same and it about $20 cheaper! |

I always had it well done, but have come to find medium (a little pink still) is so much better.
