I've noticed that if I add the artwork in iTunes before I add the song to my iPod, it won't show up sometimes. So I just add the artwork after the
songs are on my iPod.

That happens to me alot and sometimes the artwork shows up as black square.

Right click on the song > get info > info > artwork > leave it blank. Do the same again, but upload the album cover this time.
