except I grilled it without the skewers. I served it with steamed spinach and rice pilaf.
Here's the recipe if anyone is interested:
- 1/2 cup ketchup
- 2 tablespoons honey
- 1 tablespoon Worcestershire sauce
- 1 1/2 pounds boneless, skinless chicken breasts
- kosher salt and pepper
- canola oil, for the grill (I used the Griddler Gourmet by Cuisinart instead of an outdoor grill and just sprayed the grill with cooking spray. Works just as well)
Heat grill to medium-high. In a small bowl, combine the ketchup, honey, and Worcestershire sauce; set aside.
Slice the chicken lengthwise into twenty 1/2-inch-thick strips. (I then put them in a big ziploc bag, poured some of the sauce in and put it in the fridge for a day and a 1/2, but the recipe doesn't say you have to do this.)
Spray/lightly oil grill. Cook the chicken, turning occasionally, until cooked through, 6 to 8 minutes, seasoning with salt & pepper and then brush the ketchup mixture on the chicken during the last 2 minutes of cooking.
